Tuesday Italian Food==Chicken with Bacon and Olives

Today i will be posting and sharing with you my first  meal from Italy, “Chicken with bacon”  coming to you from the Po Basin region (Veneto). You can substitute the chicken with turkey instead, whichever is your preference.

Believe you me i have never cooked my chicken with bacon before and this was very exciting for me and the end result was amazingly delicious, i could taste all the herbs and seasons the recipe calls for.

ingredients:

1 whole chicken

1 onion chopped

3 garlic cloves

salt and seasoning

2 tbsp olive oil

3 slice bacon

2 tbsp butter

1 cup dry red wine

4 olive slice

1 whole lemon

Method:

1.Slice your onion and garlic. Wash and scrub lemon properly and zest it using a grater. Cut your lemon in half and squeeze the juice into a small bowl. Use a brush and dust lemon juice all over your washed chicken. Sprinkle salt, pepper and other seasoning over chicken including the inside. Combine your onion, garlic and lemon zest together into a bowl with dry herbs and mix all together. Put into the inside of your chicken.

2.Rub on your olive oil over chicken. Wrap three strips of bacon over the top of chicken. Take your butter and put onto chicken like the diagram above, next take your dry red wine and pour into baking pan along with your chicken, put foil over chicken and bake for 1 and a half hour,basing on and off. Bake at 350 degrees.

3.After one and half hour put your slice olive with your chicken and bake for another 1 hour on 500 degrees and checking your chicken constantly. Add some of the liquid from the baking pan of your chicken and make gravy, combine with slice tomatoes and one slice of bacon,season and let simmer on low until tomatoes are tender.

Rice production has been honed to a fine art in the region, with countless creamy risotto recipes giving testament to the fact that rice is as important as a component on the Veneto table as it is for the profit from its export. Cattle farming and the dairy industry are highly prized in this area (butter is often used instead of olive oil in cooking), and cheeses find their way into many dishes. The ever-present love of pork and cured meats ensures a strong pork production industry in Veneto as well.
