Slowly roll the meat over egg and smooth out the edges by rolling the covered egg into an egg or ball shape on a clean surface or into the middle of your palm..(make sure your hands are very well washed and cleaned for this process). Take your rolled meat ball and gently roll into egg and bread crumbs.

I have never tried either of these things. The eggs look quite interesting and might be something I’d like to surprise my bayou family with. But is it a brunch item? Seems very hardy!!!
