Friday Food==Shuku Shuku

Ete-sen everyone, another friday again of cooking from my african menu of the month. Ete-sen means hello in Ghana, you can also say meeng-gah-bou.  In Nigeria english is the official language since there are over 200 languages, so you would just say hello.

From my menu I have choosen Shuku Shuku, which is a coconut nigerian desert that is a favorite among kids. Since I enjoy eating anything with coconut I knew I would enjoy making and cooking shuku shuku especially eating it, and I sure did. What I have notice is how similar they are to tim-bits. Below you will find the step  by step procedure of preparing these delicate treats.





1 cup flaked coconut

1/4 cup castor sugar or superfine

3 egg yolks

1/2 cup self-rising flour 




1. Heat oven to 350 degree. In a bowl mix flake coconut, sugar, flour, and egg yolk.



2. Make sure the mixture is form into a stiff dough. When it is all mix mixed together well, shape into small balls and roll into flour(optional) place into oven and bake for 20 to 30 mins until golden brown. Voila it is finished *_*
